Eat well and cook little. Original recipes for students: “Salmorejo”
As the months go by, you will fall in love with many things, and we assure you that gastronomy will be one of them.
It's summer and they want fresh food; we have chosen a dish that is not missing in any home in summer, in fact it is not typical of Catalonia but of Cordoba and is world-famous: “Salmorejo cordobés” Does it sound?
This dish will not only make you suck your fingers, but it will make you look great in the dinners of your student flat in Barcelona, since it is very simple and very quick to prepare.
The “salmorejo” is a dish that has evolved over time but has always maintained its essence. Many years ago, it was a dish that was cooked to satisfy hunger in the most disadvantaged classes or in the most humble neighborhoods, but now it is a gourmet appetizer, used and versioned by the best chefs in the country and even the whole world . If you have tried it, you will understand that this is true because it is a really delicious dish.
You will need the following ingredients (for 6 people):
- 1kg of ripe pear tomatoes
- 200gr of white dough bread
- 100gr of extra virgin olive oil
- 1/2 clove of garlic
- 1 teaspoon salt
- Hard-boiled egg
- Serrano ham
The preparation is really easy. Look in the kitchen of your student flat in Barcelona for a glass blender or, failing that, a normal blender. Now peel the kilo of ripe tomatoes well and cut half a clove of garlic.
You must put these two ingredients in the blender jar and beat until there are no lumps left.
Once you get this texture, just add the bread, oil and salt, and beat again until you get a thick and creamy texture. Do not be lazy, keep beating until that texture will appear. Now you just have to put it in a container that allows you to put it in the fridge and let it cool.
When serving it, do not forget to put a striped hard egg on top and our well known serrano ham and… ready!
I think it's the easiest recipe but with the most delicious taste that exists!
